Cafés De Pauw – A Passion for Coffee and Tea in Brussels
Since the late 1930s, Cafés De Pauw has been part of Brussels’ culinary heritage. Nestled in the heart of Saint-Gilles, the roastery has stood the test of time without losing its soul: that of an authentic spot where you can step inside to breathe in the enchanting aroma of freshly roasted coffee and discover a selection of rare and refined teas.
In 2020, the business was taken over by Alirio, a Colombian with a passion for coffee and tea 🌎☕. Drawing on his roots and his love for coffee beans, he carries on De Pauw’s legacy while infusing it with new energy. His goal: to offer every customer a complete sensory experience, blending tradition and modernity.

- Saint-Gilles – 39 Chaussée de Waterloo: the historic store, with its original silos and old-world charm.
- Watermael-Boitsfort – Place Keym: the new location, inaugurated as part of the square’s revitalization, where the same high standards and passion await you.
Artisanal on-site roasting 🔥
At De Pauw, green coffee beans are carefully selected and then roasted right in the shop at temperatures between 180 and 220 °C. Mastering the natural Maillard reaction and caramelization brings out the full aromatic richness of the beans. Each step—mixing, roasting, and cooling—is carried out with precision to ensure a coffee with a true-to-source profile and incomparable flavors.
